Crock-pot Hawaiian BBQ Chicken

In my house chicken is one of those staple foods that we eat on a daily basis, so I am always looking for new way to cook it. Of course that lead my on a three hour Pintrest binge of finding new ways to cook chicken. Then I came across this delicious recipe for Hawaiian bbq chicken for the crockpot. Which became an automatic yes when the words crockpot popped up. I’m a full time working mom and being able to through dinner in the crockpot, then coming home and making a couple of sides is my favorite way to give kids a home cook meal without killing myself after a 13 hour shift. So I hope everyone enjoys!!! Cause my family surly did.

What you need

  • 4-6 Boneless Chicken Breast
  •  1 Bottle of Sweet Baby Rays BBQ sauce ( Remember if you are trying to save money going generic  never hurt nobody, plus cooking with the pineapples they won’t know the difference)
  •  1 20oz can of pineapple chunks, drained.

To make it

  •  Place the frozen chicken breast in the crock pot.
  •  Add entire bottle of bbq sauce, covering the chicken.
  •  Add drained can of pineapples chunks on top.
  •  Cover and cook for 2-3 hours on high or 4-6 hours on low.

Serve whole breast with your favorite side dishes.

Sorry for my absence on my blog lately. I have been super busy with my little ones and my busy work schedule. But I promise I am working on new amazing post that are cheap and easy.

Egg and Cheese Breakfast Sandwich

Always on the run and tired of eating fast food, here is an easy idea for breakfast that can save you time and money. Egg and cheese breakfast sandwich are easy morning grab that can be made the night before and popped in the microwave in the morning.

What you need:

  • English Muffins (Can always use bagels if you want)
  •  Large Eggs
  •  Cheese ( slice or shredded)
  •  Butter

Make it:

Making the egg:

  • Grab a muffin tin and lightly oil or use butter on each spot in the tin.
  •  Then crack an egg in each muffin area.
  •  Stick these in a 350 degree oven for about 10-15 minutes. Make sure that are cooked through.

Making sandwiches

  •  Stick a egg on a muffin top with cheese, and then place thee other muffin top on.
  •  Then stick in the oven for about 5-10 minutes or until they are warmed and the cheese is melted.

Oven Baked Meatball Subs

Siting around on this chilly day I’ve been thinking what is a good hearty lunch that will keep you nice and full. The only thing that came to mind is Oven Baked Meatball Sub. A nice hearty lunch that will keep you filled till dinner.

Also  remember  mommy’s if you are cutting back on our bread product you can turn this in to small sliders. Where you can watch how many you eating,  also you can add a salad and make it a delicious lunch.

What you need:

  • Sandwich rolls( cut with one side intact)
  •  Cooked meatballs ( Your favorite recipe or, frozen pre-made meatball)
  •  Pasta Sauce (homemade or jarred)
  •  Shredded Cheese

Make It:

Spray a baking sheet with cooking spray.  Preheat oven to 400 degree

Place your frozen cooked meatball in a large pot. Cover your choice of meatballs with the pasta sauce on low-med heat, stir occasionally until the meatballs are heated thoroughly.

Fill a roll with as many meatballs as you can. (Usually 4-5 Meatballs ) Top with more pasta sauce from your pot. Place filled sandwich rolls closely on the baking sheet. Then top each sandwich with shredded cheese. Bake until the cheese is melted, hot, and bubbly.


Enjoy the nice warm lunch that can also be turned into a delicious dinner on those nights your have sports practice. Just wrap them up in aluminum wrap and pack in a lunch box.  A homemade dinner on the go.

Pizza Roll ups

Here is an easy lunch that the little ones can help you with.

What you need:

  • crescent rolls
  • string cheese ( remember there are million different types, so spice it up)
  • pizza sauce
  • pepperonis

Make it:

Pre heat the oven according to the crescent roll package. Roll out your crescents and separate them, then you can spread sauce over each one. Place your pepperonis on. To finish up place a string cheese cut in half, and roll it up.

Place on a cookie sheet and place in the oven. Bake according to your  crescent roll package.


Easy mini pancakes

Waking up sometimes can be a struggle, so here is a fun breakfast idea that can be made the night before. Then you can pop it in the microwave in the morning.

Easy mini pancakes

What you need

  •  1 cup of pancake mix
  •  1/2 cup of milk
  •  1 Egg
  •  Toppings ( blueberries, bacon, sausage, any thing your heart desires)

Make it

  • Mix the first three ingredients together.
  • Fill a muffin tin almost to the top, then sprinkle with your toppings.
  • Bake at 350 degrees for 20-30 minutes.

Texas Taco Joes

Here is a easy new flip to Sloppy Joes that will have your family begging for more.

What you need:

  •  1 lb of ground meat
  •  1 onion, finely chopped up
  •  1/2 cup pepper, finely chopped up
  •  2 cans of diced tomatoes (14.5 oz)
  •  1 pkg of taco seasoning mix
  •  4 slices of Texas toast white sandwich bread
  •  1 cup of frozen corn
  •  1 cup of Mexican style shredded cheese
  •  1/4 cup of chopped fresh cilantro (Remember that most food markets sell herbs already chopped up)

Make it

Brown meat with your onions and peppers in a large skillet. Stir in tomatoes and taco seasoning; shimmer on med-low heat for 15 minutes. Or until slightly thickened. Stir occasionally. Meanwhile, toast bread

Add corn to meat mixture; cook and stir for 3 more minutes. Or until heat through.

Serve over toast slices topped with cheese and cilantro.
